Apple picking time

One of my favorite traditions is to go apple picking. Today was a beautiful day to go. The late spring freeze hurt the crop but we were able to find enough good ones. I made carmel to pour over the apples when we got home. The first of the season :) I thought about you Bro. Ron (my caramel recipe fan).

Oh, what a fun trip. I remember when we would make that excursion with 3 little boys. I am ready for Apple recipes of different sorts. Yesterday we even had Apple Chicken rolled in Ritz Crackers covered with Cheese Sauce at Cracker Barrel. It was delicious.

This is a new Caramel Fruit Dip recipe for me:
1 (8oz) pkg. cream cheese, softened
1/2 c. caramel ice cream topping
1/4 cup honey
1/4 t. cinnamon

Beat the cream cheese until smooth then beat in the other ingredients, serve with fruit.

Sounds good!

Mmm! Sounds wonderful! I make your caramel recipe just about every fall (thanks to Rachel sharing the recipe with me!). We like it with Jonagold apples, or with apple pie and ice cream. I guess it's about that time again, isn't it?

I've been buying the carmel dip and adding the ice cream crushed nut topping--it is delicious and I'm sure calorie free---I always try to take the calories out of the yummy stuff I make :)
